Ingredients

  • 3 tablespoons all-purpose flour
  • 2 tablespoons granulated sugar
  • 2 teaspoons baking powder
  • 2 teaspoons kosher salt
  • 1/4 teaspoon black pepper
  • 6 large eggs
  • 2 cups heavy cream
  • 1/2 cup salted butter, melted and cooled
  • 6 cups cooked corn kernels
  • 1 cup shredded sharp cheddar cheese
  • 1 cup shredded Pepper Jack cheese
  • 1/3 cup shredded Parmesan cheese
  • 2 green onions, sliced

Instructions

  • Preheat oven to 350 degrees.
  • In a small bowl, whisk together flour, sugar, baking powder, salt, and pepper.
  • In a medium bowl, whisk together eggs, heavy cream, and melted butter.
  • Add flour mixture and whisk until blended.
  • Stir in corn, cheese, and green onion.
  • Transfer mixture into a greased 9×13-inch baking dish.
  • Bake for 40 minutes or until set in the middle. Let cool for 5 minutes before serving.

Notes

You can use either cooked, fresh corn, frozen corn, or canned corn.
